Chocolate Peanut Butter Cupcakes

Or better known as little pieces of heaven. Seriously these are a very close second to my favorite cupcakes which are a coconut cupcake. These cupcakes were so easy and pretty and delicious! I cheated a bit and bought a boxed cake to make the base of these cupcakes, I used a triple chocolate fudge. Then I whipped up about a 1/3 cup of heavy whipping cream (actually I had Emily bake the cupcakes and whip the cream) then we added the whipped cream to a 1/2 cup of smooth peanut butter. I then took my piping bag and tip and squeezed some of the peanut butter whipped cream mixture into the cupcakes. Adding the whipped cream is a stroke of genius because it made the peanut butter light and fluffy which is so much easier to squeeze through a little tip. I then frosted them with the easiest chocolate frosting recipe I have ever found, also very tasty! I never, never, never make a good chocolate frosting, it normally has clumps or is not chocolaty enough but this recipe had no clumps and was a delightful chocolate taste. I'm so happy with how these turned out. I really think that it is back to the kitchen for me, it was a way to long break!
