I have a couple other posts in the works, I'm just waiting on pictures. I have a post about the 30 Seconds to Mars concert that I went to and a haunted house that I went to last night. But I do have a post today about a pie that I made yesterday. I went to the grocery store on my lunch break on Monday and was instantly overwhelmed with the sweet smell of peaches. So rationally I bought 5 pounds:) I decided that the best way to use those peaches was to make a pie. So I also bought french vanilla ice cream to go with the pie. I didn't follow a recipe at all for the filling of the pie but I do know that I put all five pounds of peaches sliced and peeled in the pie crust with about 11/2 cups of sugar and about 1 tablespoon of cornstarch. I have tried a lot of different pie crust recipes and over time I have used bits and pieces of several different ones until I came up with my own that I really like. So for a 10" double crust I use:
2 1/2 Cups flour
1 tsp Salt
1/8 cup sugar
1 Tablespoon Apple Cider Vinegar
7-8 (or more if needed) tablespoons of ice water
1 Cup shortening
In a large bowl I mix the flour, salt and sugar. I then use a pastry blender to blend the shortening into the flour mixture until it resembles crumbs. I then add the apple cider vinegar and ice water and mix with a wooden spoon. I add water until the mixture is moist and does not have any dry stuff hanging out:) I then shape the dough into a disk and throw it in the fridge for about 30 minutes. When I take it out I cut the dough in half and roll out the first half and then put it in the pie plate, then fill the pie with whatever filling then roll out the other half and put it on top of the pie and seal the edges.
For this pie I cut the second half into strips so I could make a lattice top to the pie. I baked the pie at 425 for 25 minutes covered with foil and then I take the foil off and turn it down to 375 and cook it for another 35-45 minutes.
