Almond Cupcakes with Cream Cheese Frosting




Last weekend I made these tiny cupcake for our ward linger longer (basically just a potluck that we all contribute to after our fast Sunday). They were an almond cake (it was supposed to be a lemon cake but I didn't have lemon) with a cream cheese frosting. The frosting was probably the best I have made, yay! For a while I have been really unsatisfied with the way my frosting looks on the cupcakes that I have made and I knew it was because I had the wrong size tip for piping my frosting on, so I went to Orson Gygi and bought a couple of new tips along with the new bag and coupler and When I was piping the frosting on it was exactly what I had been wanting. And then I put sprinkles on and they were just not as cute anymore. Oh well, they were really good. Also I was trying for a tiffany blue because I really want to make a Breakfast at Tiffany's cupcake with cute sprinkles and the tiffany blue frosting swirled on but when I put the blue in it was to blue so I thought I would add just a bit of green, well then it became green frosting so I added just a bit more blue and this is what I came up with, not even close to tiffany blue. We will just say I was trying for an under the sea blue/green:)
