This weekend as I was debating what I was going to try and bake I decided
to try my hand at cream puffs again. I have never been able to succesfully make the pastry part, they never rise correctly and they are always dense. I have about 20 cookbooks and most of them have a recipe for these and they were all different. I have one cookbook specifically for baking that America's Test Kitchen put out of recipes that they have made over 100 times each to get the best recipe for the most foolproof results, the problem with this cookbook is that most of the recipes are kind of
labor intensive, which was the case with this recipe, but I decided to use a tried and true recipe and not try to take any shortcuts....And the results were great! I love these and think that they were adorable. Not only that they tasted really good. I made the whipped cream with a dash of almond extract (I have a thing for almond) and it turned out really yummy. Here are the pictures, this may have to become my signature dessert:)
